EMERALD SPIRIT
A Journey through Irish Whiskey Heritage
vineyards in the cognac region of France led to increased demand for whiskey as an alter native spirit. However, subsequent events hindered its growth, notably the turmoil of the 1916 Irish War of Independence and the ensuing civil war, compounded by trade em bargoes imposed by Britain on Irish exports. The onset of American Prohibition further exacerbated the industry’s woes, cutting off a significant market for Irish whiskey. Adding to the challenges was the emergence of blended whisky in Scotland, a development partly in fluenced by an Irish exciseman named Aene as Coffey, whose invention of a more efficient continuous still revolutionized spirit produc tion. This innovation led to the creation of blended whisky through the mixing of single malt whisky and grain whisky, denting the market share of Irish whiskey. Despite initial resistance from some Irish distillers to adopt Coffey stills, others embraced the technology, temporarily giving Ireland an edge in whiskey production until Scotland caught up by 1847. At Royal Oak, the pinnacle of the Irish Whis key journey is reached within the confines of our French, American and European casks, where a transformative aging process oc curs. Here lies the essence of the Irish craft - a minimum aging requirement of three years, allowing the spirit to mature and acquire depth, complexity, and a subtle oak influence. It represents a harmonious blend of tradition and innovation, where the true spirit of Ire land finds its fullest expression.
Irish Whiskey, deeply rooted in the rich tra ditions of the Emerald Isle, embodies a centu ries-old legacy within the walls of the distillery. Refined through a meticulous triple distilla tion process as well as column distillation, it emerges with a distinctive smoothness and a character that it is said to be lighter than its Scottish counterparts. With a reputation for its harmonious and pleasing taste profile, Irish Whiskey boasts a diverse range of styles, in cluding single malt, single pot still, grain and blended whiskey, each serving as a testament to Ireland’s esteemed distilling heritage. Historical records suggest that whiskey con sumption was widespread in Ireland by the 16th century, with distillation likely dating back even earlier. The Irish take pride in the notion that whiskey production in their coun try predates that of Scotland, with claims by the Irish government asserting its existence as far back as the 6th century, though con crete evidence for this remains elusive. One thing we can say for certain is that the oldest reference to the existence of Whiskey comes from The Red Book Of Ossary and has been dated from 1324. Nonetheless, by the mid-16th century, whiskey had firmly established itself in Irish culture, evident in legislative acts such as the 1556 English parliament’s restriction on unlicensed distillation, reflecting its wide spread consumption throughout Ireland. The fortunes of Irish whiskey experienced a notable upswing in 1872 when the devastation wrought by the Phylloxera Vastatrix louse on
Seated in 42 acres of pastoral landscape, and surrounded by bountiful barley and wheat fields, Royal Oak Distillery is perfectly situated to create The Busker Irish Whiskey. One of the main rivers, the River Barrow, flows by the land and offers the Natural Barrow Aquifer, the largest underground lake in the provence of Leinster, from which we source our water as we produce our whiskey in what is known as Ireland's Ancient East.

THE ENDURING LEGACY OF POT STILL WHISKEY: A TALE OF INNOVA TION AND RESILIENCE The origins of Pot Still Whiskey are in tertwined with a chapter in Irish history marked by economic pressures and legisla tive control. In 1785, the British Crown intro duced the malt tax, a move aimed at capital izing on the global success of Irish whiskey. This tax imposed heavy tariffs on the malt ed barley essential for crafting Single Malt whiskey, threatening the very foundation of the Irish distilling industry. Faced with the burden of exorbitant tax es, Irish distillers turned to innovation to circumvent the malt tax’s stifling grip. The solution lay in incorporating unmalted barley into their mash bills, a daring depar ture from tradition that gave birth to Pot Still Whiskey. This ingenious adaptation not only enabled distillers to evade the full brunt of the tax but also bestowed upon the whiskey a distinct spiciness and full-bodied flavor profile, setting it apart as a true em bodiment of Irish craftsmanship. Pot Still Whiskey swiftly captured the hearts and palates of the Irish, transcending its role as a mere libation to become a symbol of re
silience and identity. Its rise mirrored the in domitable spirit of the Irish people, who had long weathered economic hardships and po litical adversity with unwavering fortitude. Even after the repeal of the Malt Tax in 1855, Pot Still Whiskey retained its eminent sta tus, firmly establishing itself as an integral part of Ireland’s cultural and culinary herit age. Its legacy endures as a testament to the resourcefulness and creativity of Irish dis tillers, who have deftly navigated through tumultuous economic, political, and social landscapes to craft a spirit that transcends time. In the ever-evolving landscape of whiskey production, Pot Still Whiskey remains a bea con of tradition and innovation—an art form continually shaped by the hands and hearts of those who proudly call themselves Irish. It is a reminder that amidst adversity, the Irish spirit prevails, leaving an indelible mark on the world of whiskey and beyond.
Pot Still, the most quintessential Irish style of whiskey, is given special treatment to bring out beautiful complexity as the natural spice of pot still is married with the beauty of bourbon and the sweet fruits of Oloroso casks to create a banquet for the senses.

GRAIN WHISKEY DISTILLATION The process of grain whiskey distillation at Royal Oak is a meticulous endeavor, begin ning with locally sourced wheat stored in dedicated silos. The wheat undergoes a se ries of continuous processes, operating 24 hours a day, seven days a week. Initially, the wheat is processed into fine flour in a ham mer mill, followed by mixing with warm wa ter in a hydrator vessel. This mixture is then heated to 90°C in a jet cooker, initiating the liquification process of the starch granules. The liquified wheat undergoes further treatment in a liquification tank, where it remains for 4.5 hours, allowing the burst starch granules to become more accessi ble to enzymes for the conversion into fer mentable sugars. Subsequently, the mixture is cooled and combined with malted barley grist in a saccharification tank, where the naturally occurring enzymes facilitate the conversion of starch into fermentable sug ars, yielding a mash. After cooling, the mash is transferred to fermentation vessels, known as washbacks, where distillers’ yeast is added. Over a
period of 72 hours, the yeast consumes the fermentable sugars, producing heat, carbon dioxide gas, and crucially, alcohol. This fer mentation process yields a beer-like liquid with an alcohol content of 8% alc./vol. The resulting beer, still containing grain solids, is then distilled in a series of four col umns. The first column operates under vac uum, allowing the alcohol to vaporize at a lower temperature while separating out the partials from the grain solids for animal feed. Subsequent columns further purify the spir it, removing undesirable components such as fuel oils and volatile alcohols. Ultimately, the refined spirit, now at approx imately 94.5% alc./vol., is transferred into casks for maturation, marking the culmina tion of Royal Oak’s meticulous distillation process. The first cask it enters is American Oak ex Bourbon casks and then into the Marsala cask. Here, the spirit undergoes a transformative aging process, acquiring depth, complexity, and character, reflecting the craftsmanship and dedication embodied by Royal Oak Distillery.
Through the advancement of technology, the columns at Royal Oak Distillery are forging ahead in the production on quality. Choosing the finest wheat from the surrounding area, we allow our column still to create the highest quality spirit to become The Busker Single Grain and part of The Busker Triple Cask, Triple Smooth blended whiskey.

solids. The process is repeated with succes sive fills of hotter water, called sparge water, to extract additional sugars from the grain. The resulting wort from the initial fills is di rected to charge the fermenters, while the wort from the final sparge is used to mix the next batch of grist. The spent barley residue remaining in the mash tun is repurposed as cattle feed for local farmers. The sugary wort, along with yeast, is then transferred to one of the washbacks, where fermentation ensues for approximately 72 hours, yielding a beer-like wash with a minimum alcohol content of 8% alc./vol. The wash undergoes distillation in three copper pot stills, each playing a crucial role in refining the spir it. The wash still initiates the vaporization of alcohol through heat, with the resulting clear spirit emerging via the condenser. The remaining 1% alc./vol., known as pot ale, is repurposed into pig food. The spirit from the Wash still is once again heated to allow for evaporation and allowed more contact with the copper, refining the alcohol. It is condensed and the spirit ad vances to the final still. In the third and final still, the spirit undergoes further rectification, ensuring its purity. The heads and tails produced from this distilla tion are once again recycled, contributing to subsequent distillations. The refined spir it, now ready for maturation, is transferred into various types of casks, each imparting its unique character during the aging process.
Pot Still & Single Malt Distillation at Royal Oak Distillery stands as a testament to both tradition and innovation, marked by the ar rival of three monumental copper pot stills on September 30th, 2015, crafted by Forsyth in Rothes, Scotland, renowned as the world’s most experienced whiskey still makers, each of these imposing stills weighs between 4 and 5 tons, with the largest, the wash still, towering at 6.50 meters tall and boasting a capacity of 15,000 liters. These magnificent vessels serve as the cornerstone for produc ing both pot still and single malt whiskeys, adhering to a meticulously crafted process. The journey begins with locally sourced malted and unmalted barley stored in sep arate silos. To produce single malt whiskey, only malted barley is utilized, whereas for single pot still whiskey, a blend of unmalted and malted barley is employed. The barley, whether malted or unmalted, undergoes grinding in a roller mill, transforming it into a coarse flour known as grist. This grist is then combined with water at a precise tempera ture of 64.5°C in the mash conversion vessel, initiating the conversion of starch into fer mentable sugars by the naturally occurring enzymes present in the malted barley. Subsequently, the barley and water mixture is transferred to a mash tun, equipped with a sieve-like floor, separating the sugary bar ley water, known as wort, from the barley
Both aesthetically pleasing and super functional, the pot stills at Royal Oak Distillery offer the height of quality through evaporation and condensation as our spirit passes along the process. AGING Aging is a critical stage in the whiskey-ma king process, with Irish Whiskey requiring a minimum of three years of maturation in oak casks to earn its title. Like many other Irish distillers, Royal Oak utilizes ex-bour bon barrels and sherry-seasoned casks for aging. However, what truly distinguishes us is our innovative use of marsala seasoned casks. Established in 1833, Cantine Florio stands as the original producer of Marsala wine, maintaining its reputation for excel lence by producing over 80% of Superiore quality marsala. While well-seasoned mar sala casks typically remain within their Si cilian origins, our partnership with Cantine Florio, as part of the group family, grants us unparalleled access to these unique casks.
WATER Water is a vital component in the distilla tion process, and at Royal Oak Distillery, the importance of quality water is paramount. Sourced from the Barrow Valley Aquifer, a natural groundwater reservoir holding an impressive 200 million cubic meters of wa ter, our distillery benefits from a reliable and abundant water source. Originally, our cool ing water was drawn from the River Barrow. However, in early 2022, recognizing the need to conserve this precious resource and mitigate potential issues during periods of low water levels, we implemented a closed loop cooling system. This system incorpo rates a cooling tower, allowing us to recycle and reuse our cooling water, reducing our environmental impact while ensuring oper ational efficiency.

At 88.6 proof, or 44.3% alcohol by volume, our whiskey embodies the perfect balance of strength and sophistication — a testament to the artistry that defines Royal Oak. CRAFTING OUR SINGLE GRAIN WHISKEY: A BEAUTIFUL SWEET FINISH Crafting our Single Grain whiskey at Royal Oak is an art that marries tradition with innovation, a dedication echoed in every sip of The Busker Single Grain. Our commitment lies in handpicking the finest spirits and nurturing them within our carefully chosen Bourbon casks sourced directly from the USA, alongside the exquisite rarity of Marsala casks hailing from Cantine Florio 1833, one of Sicily’s oldest wineries. A SYMPHONY OF FLAVORS The Busker Single Grain emerges as a testament to this dedication, boasting a delicate, pale straw hue that hints at the depth within. From the first sip, indulge in the rich layers of flavor, where sweet caramel dances gracefully with subtle whispers of vanilla and the embrace of oak. As the whiskey envelops your palate, notes of caramel intertwine with velvety vanilla, underscored by a subtle hay-like essence that adds depth and character. A SATISFYING LINGERING SWEETNESSN What truly sets our Single Grain apart is its enduring finish — a symphony of sensations that lingers long after the glass is empty. Each sip culminates in a satisfying dryness that leaves behind a lingering sweetness, inviting you to savor the moment.

Our commitment to quality shines through in every aspect of our production process, from the careful selection of ingredients to the precise maturation techniques employed. Here’s a glimpse into what sets our whiskey apart: DOUBLE AGED Our whiskey undergoes a unique maturation process known as “Double Aged”, where it is transferred from one type of barrel to another during aging. This method enhances complexity and imparts distinctive aromas, resulting in a truly exceptional drinking experience. By undergoing this dual maturation, our whiskey achieves a depth of flavor that captivates the senses and leaves a lasting impression. NON-CHILL FILTERED We take pride in preserving the integrity of our whiskey by bypassing the cold filtration process. This decision ensures that the liquid in the bottle closely resembles the liquid in the cask, capturing the full range of tastes and aromas developed during maturation. By opting for non-chill filtration, we provide enthusiasts with an authentic sensory experience that showcases the true essence of our whiskey. NATURAL TINT The rich color of our whiskey is a testament to its natural maturation process.
