These two mash bills are cooked, fermented, distilled, and aged separately prior to blend ing. Blending these two whiskeys produces a sweeter Maryland Style Rye taste profile.
Embracing this legacy, Sagamore Spirit me ticulously crafts its signature Rye Whiskeys, blending tradition with innovation. We re ceive weekly shipments of grain which un dergo strict quality checks to ensure they meet our high organoleptic standards and have the correct moisture content for stor age. These grains are filled into our silos and then milled and blended to the percentages of our two mash bills. The low-rye mash bill is 52% rye, 43% corn and 5% malted barley while our high-rye mash bill is 95% rye and 5% malted barley. Each mash bill will under go a 5–6-hour cooking where starches in the grains will be converted to sugar. This sugar water or “wort” will then be transferred to fermentation tanks where yeast is added to make our distillers beer. The fermentation process takes around 3 days and the low-rye distillers’ beer will have a 7.5% ABV while the high-rye will be 7% ABV.
